Mini sernik mango z porzeczkami


Mango Cheesecake with Redcurrants

Mój ulubiony, letni sernik. Najlepszy! Nic dodać nic ująć, gorąco polecam!


Masa serowa
  • 200 g serka kremowego
  • 250 g mascarpone
  • 0,5 szklanki drobnego cukru
  • 2,5 jajka średniego lub 2 duże
  • 200 g pulpy z mango z dodatkiem cytryny i limonki
  • 1,5 łyżki budyniu śmietankowego bez cukru
  • 1 laska wanilii
  • 2 łyżki śmietany francuskiej lub 50 ml kremówki
Spód
  • 250 g ciastek
  • 140 g masła
Dodatkowo
  • 400 g porzeczek + łyżka brązowego cukru(lub więcej do smaku)
  •  1 łyżka mąki ziemniaczanej

Nagrzać piekarnik do 140-150 st C. Przygotuj dwie me, okrągłe formy o średnicy 10-12 cm. Dno wyłóż papierem do pieczenia i przeciągnij papier na zewnątrz zamykając ściany formy. Z zewnątrz obwiń 3-4 warstwy folli aluminiowej od spodu i po bokach form, tak aby nic nie wpłynęło do środka (formy wstawimy do wody). 

Rozpuść masło do spodu sernika. Ciasteczka rozkrusz w malakserze lub ręcznie, np. przy pomocy wałka. Dolej masło i wymieszaj. Konsystencja powinna przypominać mokry piasek. Taką masą wylep dno form. Wstaw je do lodówki na czas przygotowywania masy serowej. 

Serek kremowy, mascarpone utrzyj z cukrem. Dodaj jajka i zmiksuj przez chwilę. Dodaj pulpę z mango (2 świeże owoce mango zblędowane z łyżeczką soku z cytryny i limonki), budyń, nasiona z jednej laski wanilii i śmietanę. Dokładnie wymieszaj do połączenia się składników. 

Zagotuj wodę w jednym czajniku. Wlej ją do dużej formy, do której włożysz foremki z sernikami. 

Wylej masę serową na przygotowany wcześniej spód. Wstaw do formy z gorącą wodą i wszystko razem do piekarnika. Piec przez 45 minut. 

Porzeczki umyj i obierz. Zagotuj z dodatkiem cukru. Zaciągnij łyżką maki ziemniaczanej wymieszanej z odrobiną wody. Konsystencja gotowej polewy powinna przypominać kisiel. Po 45 minutach pieczenia serników wylej część polewy na wierzch ciast. Rozsmaruj i wstaw do piekarnika na ponowne 10-15 minut. Po upieczeniu posmaruj ciasto resztą porzeczkowej polewy. 

Serniki chłodzimy w zamkniętym piekarniku przez ok godzinę. Wyjmujemy z piekarnika i odwijamy folię aluminiową. Zostawiamy do całkowitego wystygnięcia po czym odchładzamy w lodówce minimum 3 godziny, a najlepiej całą noc. 

Sernik pieczony w kąpieli wodnej i niskiej temperaturze ma bardziej wilgotną, kremową konsystencję. Musi być jednak dobrze schłodzony przed jedzeniem. Smacznego!

 I am presenting to  you my first, favourite summer food. It is a cake, maybe it is not super fit and healthy but it is absolutely gourgase! I love it, and so everybody who try it. It takes time to make it (most of that time is baking and cooling) but it is worth it. It contains fresh, sweet mango and lovely acid red currants. The taste is balance down, sweet and sour and it has velvety tacture.


  • 140 g Digestive Biscuits 
  •  60 g unsalted butter, melted
Cheese filling
  • 200 g Creamy Cheese 
  • 250 g Mascarpone Cheese 
  • 0,5 glass of caster sugar 
  • 3 large free range eggs 
  • 200 g mango pulp (made from 2 fresh mangoes) 
  • 1,5 tbsp Instand Custard powder or potato flour 
  • 1 vanilla pod 
  • 2 tbsp of Creme Fraiche or 50 ml of Fresh Cream
Topping
  • 400 g fresh red currants 
  • 1-3 tbsp of soft brown sugar 
  • 1 tbsp potato or corn flour
Heat oven to 140-150 C fan/gas and line the base of a two 10-12 cm, round
spring form tin with greaseproof paper pulling the paper out and close the tin.
Cover it very well with aluminum foil all around (we will bake the cake in a water,
so need to make sure that tin is caulk well). Crush the biscuits in a food processor or in a food bag using a rolling pin. Tip into
a bowl with the melted butter and mix well. Push the biscuits into an even layer
into the base of the cake tin and chill until needed.
Blend mango until smooth. Add 1 teaspoon of lemon juice and 1 teaspoon of
lime juice.
 
In a separate bowl use an electric whisk/mixer to beat the soft cheese and
mascarpone cheese with the sugar and vanilla seeds. Next beat in the eggs one
at a time. Finally beat mango pulp, cream and custard powder.
Pour the cheese mix on top of the biscuit base. Place small tins with cake filling
into bigger baking/roasting pan. Pour boiling water into that large pan up to half
high of the cake tins. Put it into oven.
Bake it like that for 45 minutes.
 
To prepare topping you need to cook red currants until juice comes out of them.
Add some sugar to taste. Thick it wit spoon of corn or potato flour (mix the flour
with water and add the mixture to the boiling fruits). Cook for one or two minutes
until it gets thick. It should have jam consistency.
After baking the cake for 45 minutes put the topping on it. Bake for other 10-15
minutes. You can save some fruits to put extra layer on cake after is baked (but
still warm).
 
Live cheesecake in oven for half an hour, then take it out and cool it down. Place
it in a fridge for at least 4 hours (overnight is recommended) to cool and
set. Enjoy it!
