Sernik mascarpone z białą czekoladą i malinami

White Chocolate and Raspberry Cheesecake

 
Bardzo prosty i szybki deser. Wymaga tylko kilku składników i czasu na schłodzenie. Nie dodawała do niego tyle śmietanki ile podano w przepisie, więc czas chłodzenia znacznie się skrócił. Jeżeli chcecie jednak, aby konsystencja była bardziej kremowa (moja była serowa) to zróbcie jak podaje poniżej. Słodkości!


Spód
  • 60 g roztopionego masła
  • 150 g ciastek zbożowych
Ciastka rozkruszyć w malakserze lub w zamkniętej plastikowej torbie ugniatając je np. wałkiem do ciasta. Dodać masło i wymieszać. Masą wyłożyć dno formy o średnicy 20 cm i dokładnie docisnąć. Odstawić do lodówki.

Masa serowa
  • 200 g białej czekolady
  • 250 g serka mascarpone
  • 300 ml śmietany min 30% (ja dałam połowę)
  • ziarna z 1 laski wanilii
  • 500 g świeżych malin (lub 300+200 mrożonych)
  • 1 łyżka syropu z agawy lub cukru

Biała czekoladę rozpuść w kąpieli wodnej. Odstaw do przestudzenia, ale uważaj aby ponownie się nie ścięła (5-10 minut wystarczy)

W osobnej misce wymieszaj łyżką lub przy pomocy miksera serek ze śmietanką i wanilią. Nie trzeba długo miksować, ważne aby składniki dokładnie się wymieszały, konsystencja była kremowa. Dodaj białą czekoladę i wymieszaj. 

200 g malin zmiksuj ręcznym blenderem z cukrem lub syropem z agawy (może być też miód, syrop klonowy) na malinowy sos. Przelej przez sito, aby pozbyć się pestek. Jeżeli używasz mrożonych malin mogą być niecałkowicie rozmrożone, wówczas nie usuniesz nasion.

Przełóż masę serową na ciasteczkowy spód. Zrób kilka dziur i wypełnij je częścią sosu malinowego, zostawiając coś na wierzch ciasta. Przykryj dokładnie masą serową i wyrównaj wierzch. Schowaj do lodówki na kilka godzin, lub na całą noc. Przed podaniem udekoruj resztą świeżych malin i polej dodatkową resztą sosu malinowego.

For the base
  • 60 g melted butter
  • 150 g digestive biscuits
Crush the biscuits into crumbs (you can use blender or resealable freezer bag and use a rolling pin). Add butter and stir until combined. Spoon into a 20 cm round spring-form tin and press with the back of a spoon until level. Chill in the fridge while you make the topping. 

Topping
  • 200 g white chocolate
  • 250 g full fat mascarpone cheese
  • 300 ml double cream
  • seeds from 1 vanilla pod
  • 500 g fresh raspberries
  • 1 tbsp icing sugar or honey/mapple syrup etc.

Break the chocolate into a bowl and sit in on top of a pan of simmering water. Stir until melted but not hot. Leave to cool for 5-10 minutes until cool but still liquid.

Mix mascarpone in a bowl with cream and vanilla. Stir with the spatula until smooth. 

To make a coulis for he top of the cheesecake (I added some inside as well) place half the raspberries into a small blender. Add sugar and whizz until runny, then pour through a sieve to remove the seeds. 

Add melted chocolate into a bowl along with the cheese mixture. Stir to combine. Spoon half of the cheese mixture onto the biscuit base. Use the handle of teaspoon to make few small holes pushing right down to the top of the biscuit base. Pour some of the coulis into the holes and spoon the remaining white chocolate mixture on top and level the top. 

Cover with clin film and chill in the fridge for minimum of 6 hours or overnight. 

To serve, arrange the rest of the raspberries on top of the cheesecake and drizzle the remaining coulis over the top.
